Maple Isle smoke & noodles

Hand-pulled noodles, rice bowls and a chilli oil we smoke over maple wood every morning. Come hungry, queue briefly, and eat it while the wok breath is still on it.

A day at the stall

When to come for what

The stall moves through three moods. Pick the one that suits your appetite.

  1. Late morning

    Broth is ready

    Stock has simmered since dawn. Laksa and chicken rice taste their clearest in the first hours.

  2. Midday

    Wok at full fire

    The lunch rush brings the hottest wok, which is best for char noodles and hor fun with real smoke.

  3. Evening

    Supper bowls

    A slower pace, shared plates and pudding. Good for small groups who want to linger.

Our story

A family recipe with a little smoke

Maple Isle started as a weekend pot of noodles cooked for neighbours. The recipes came from a grandmother’s handwritten notebook. The maple smoke came from a happy accident with a borrowed smoker and a batch of dried chillies.

Today the stall keeps the same habits: a small menu, stock started before sunrise, and every bowl cooked when you order it. Nothing sits under a heat lamp.

Finding us

Look for the red maple awning

We are in the food centre’s main row. Follow the smell of smoked chilli and look for the red awning with a small leaf on it.

Seating is shared, so grab a table before you queue at busy times.

Party trays

Feeding a crowd?

We cook large trays for office lunches, birthdays and family gatherings. Tell us the date and headcount, and we will reply to confirm what we can prepare.

  • Char Noodle Tray

    Our signature noodles with smoked chilli oil on the side. Serves around 10.

  • Chicken Rice Spread

    Sliced chicken, rice, ginger and scallion sauces, and broth. Serves around 12.

  • Garden Wok Tray

    A fully vegetarian mix of fried rice and wok greens. Serves around 10.

Questions at the counter

How spicy is the smoked chilli oil?

It is more smoky and fragrant than fiery. Every bowl can have it on the side, and we can leave it out entirely.

Do you have vegetarian options?

Yes. The Wok Garden Fried Rice and the pudding are vegetarian every day, and we can adapt the char noodles without egg or seafood sauce on request.

Can I take food away?

Everything on the board can be packed to go. Noodle soups are packed with the broth separate so the noodles stay springy.

How far ahead should I enquire about trays?

Three days is ideal, and larger gatherings benefit from a week. Send the enquiry form and we will confirm by email.
